Agreed, it's a hard problem. The thing that fascinates me about it in NMS is that they've gone out of their way to create something that's both obviously unrealistic and irritating to the player, because they wanted to enforce a particular playstyle.

Actually, another weird effect of what they've done is that if you have a freighter, you can make periodic stacks of money from any suitably high-value cargo, because what you buy/sell affects the stock in the local market, and well as the system price.

So you turn up with a cargo-hold full of (say) cryochambers, and sell it all in one transaction, getting the initial price for every unit. This tanks the price of cryochambers by 90%, so you can now buy your original cargo back for about 1/5th the cost (there's always a buy/sell margin in the market, which is fair enough). Apparently you used to be able to just cycle through this about a dozen times in a given system before the margin got too low, but the devs didn't like that. But the patch they put in was that the price stays down, rather than saying "you sold them to someone who's shipping them out". So you still get to keep your cargo and most of the money.

And the whole game is built on decisions like that. Including, alas, the UI. Did I mention the conversation UI at all, in my rantings? :)
